How can I ever forget ye olde Irish Stew that warmed my heart and bones in the cold damp winters in Ireland.
INGREDIENTS
3 pounds stewing lamb
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon thyme
2 tablespoons parsley
6 potatoes (quartered)
3 onions
4 cups water

METHOD
Coat meat with flour, salt and pepper.
Cook in oiled hot pan. Brown on each side.
Add potatoes, onion, parsley and thyme.
Cover with water.
Bring to boil and simmer for 2 hours or until meat is tender.
SERVING SUGGESTIONS
Serve this delicious stew with Irish bread and Guinness. If you invite company over, the 'craic' will be good in the kitchen. I wonder why.
