Cold tea brack

INGREDIENTS
2 cups self-raising flour
1 teaspoon cinnamon
12 oz mixed fruit
6 oz brown sugar
4 oz margarine or butter
1 cup cold black tea

METHOD
Mix fruit, sugar and cold tea.
Leave overnight.
Rub margarine in dry ingredients.
Add to fruit mix.
Bake in preheated oven at 300oF 12 for 1 1/2 hours.

SERVING SUGGESTIONS
My mother, who is in her nineties now, is the best cook I know in Ireland. Her brack was served weekly to me as a child. I hope you enjoy it as much as I do.
